It is believed that Black pepper, the green as well as white peppercorns the identical fruits ( Piper nigrum) The difference is in their color which reflects the various stages of development and processing techniques.The black peppercorns are produced by picking the pepper berries at the time they’re half-ripe and are getting ready to change color to red.They are then allowed to dry, which will cause them to shrink and darken in color. In contrast, green peppercorns are harvested when they are not yet ripe and green , while white peppercorns are harvested at the peak of ripeness and then immersed in brine to get rid of their dark outer shell , leaving only the white pepper seeds.Peppers that are black can be the most pungent and delicious of all peppers. It can be purchased as cracked or whole peppercorns or powdered into a fine powder.
